Tuscany has a leading role in the olive growing and olive oil sector. The typical Tuscan olive cultivars (frantoio, correggiolo, moraiolo, leccino, and pendolino) are harmoniously distributed in the olive grove of our company.
The olive harvest is done entirely by hand from the end of October to November. In this period there is no “maximum amount of oil” on the plant; in this way, the collection guarantees the high-quality level of our oil.
Environment, cultivar, and immediate pressing of the olives, therefore, guarantee the low acidity of our oil and a rich percentage of monounsaturated fatty acids and tocopherols.
The Castagolino farm produces organic extra virgin olive oil or Tuscan PGI
